Man-eating corn is a GM crop made by Monsanto. This is not an deliberate product, and there's no known case of selling seed that contain the mutation to farmers. However, as the Anders Eklund regime put pressure to quickly get enough crops for his central food distribution system, contamination occur. Thousands of elderly and schoolchildren are exposed, but the Eklund regime censor the press to deny the accident. A dozen of anti-GM protesters are also exposed while rallying on a testing field.

Acute poisoning
Skin exposure
First sign is usually a rash on exposed skin. The exposed skin develop blisters, and turn purple and black. Higher doses cause skin lesions and necrosis, resembling "rotten flesh". Even small amounts increase the risk of skin cancer.
Inhalation
The first sings is an irritation in the upper respiratory system, similar to pollen allergy. Later on, it cause a chemical reaction with the lung tissue, whose rest products trigger a cytokine storm. The lungs are filled with fluids, which cause the patient to die from drowning. While a few cases can be saved with a ECMO machine, the treatment takes several months, and survivors suffer life-long immunopulmonary diseases, like asthma.
Digestion
First sign is stomach pain, anorexia, flatulence and nausea. Then dizziness, vomiting, cramps and diarrhea.
The substance is an effective intussusceptor, and trigger a telescope-like folding of the small intestine. Chemical reactions in the neural tissue on the intestine walls trigger an array of neurological symptoms. This is similar to an infection with the wijnja virus.
Later, the cells in the stomach wall undergo necrosis, which prevent the utilization of nutrition. The necrosis can trigger a chain reaction known as gangrene, which is invariable fatal. Moreover, a hotspot of rest products are accumulated in the rectum walls, which disintegrate it, causing a large intestine prolapse. The colon prolapse cause death withing 15 minutes.
Sub-lethal dozes do not cause colon prolapse, but is associated with potentially lifelong gastroneurological disabilities. Common effects include depression, chronic IBS, dementia and personality disorders.
Long-term effects
Man-eating corn is a powerful mutagen, and individuals exposed to sub-lethal doses are at high risk for cancers, infertility and birth defects. In some cases, the plant DNA is mixed with human DNA, turning the subject into a plant-human hybrid. This trigger a quick growth, which can add up to one meter of height. Those who survive the morph do usually look monstrous, and lose cognitive abilities. Life expectancy is not currently known.
